During the winter, there is nothing better tha n good old Irish stew to warm the bones and comfort the mind! My mom taught me how to make traditional Irish stew, which I love, but to be honest I hate peeling potatoes!!! A few weeks ago I was craving stew, but didn’t have time or the energy for the preparation. Our local grocery store has a section of already chopped produce and that’s when I had an idea to change out the peeled potatoes and carrots for ALREADY prepared sweet potatoes and butternut squash! Genius right? 😉
You will need:
1 large package of stewing beef (cubed)
sweet potatoes (hopefully you can find them pre peeled)
Cubed butternut squash
small white potatoes
1 cup of flour
1 pack onion soup mix
thyme and rosemary sprig
salt and pepper
1 cup olive oil
1 beer (I like dark ale)
In a large bowl coat your meet with the flour.
Add pepper and salt and make sure you coat pieces well.
On high, heat up the olive oil.
Place meat in crock pot.
My secret ingredient!
In the skillet used for the meat, add 3 cups of water and mix the soup. The pan should be nice and hot. Make sure you gently scrape the skillet to get all the nice flavour from the browned meat!
Pour the soup into the slow cooker.
Add the left over flour you used to coat the meat and stir.
Add the sweet potatoes, butternut squash, small potatoes, rosemary and thyme.
My favourite part, add the beer!Set your crock pot to 6 hours and enjoy the aroma of your stew cooking! To thicken the stew remove the glass top and let it cook for an hour or two without.
It’s that easy! I am so glad my laziness and dislike for chopping inspired me to change up my stew recipe! Otherwise, I would not have substituted sweet potatoes and squash into my stew recipe.
Even if I had to chop the sweet potatoes and squash to make this stew I would do so! The sweet potatoes and squash break down creating a wonderful soup like texture perfect for dipping thick buttered french bread, or if you are low carb,fill you up without!
