It feels like forever since I’ve written a post! November was a crazy month here at Lincluden Cottage! Usually I don’t include personal information in my posts, but for cathartic purposes today I am!!! 😉 It seems like last month was one mini crisis after another. All is well now, however, several “mini crisis” can add up on the old stress meter. Back in October, my 9 year old had a bad reaction to a flu shot. Weeks later, he still wasn’t recovering from a bug and became very lethargic and tired. There was concern the flu shot may have really lowered his white blood cell count which can happen on very rare occasions. We received the blood work back asap and his blood count was totally o.k.! Yay! A few weeks later, he became sick again, turns out he contracted another bug and passed it along to my eldest son who is still coughing away.
Next, my mom came to visit and ended up in the ER with kidney stones. She’s totally o.k. but it was concerning at first as she just got the go ahead to fly after complications during a knee surgery. Prior to our hospital trip I found two ticks on the puppy and stupidly administered half of the medication like a pill which lodged in her throat. I rushed her to the vet and luckily she was o.k.! Finally a few days later, my eldest dog Dolly, started snapping at the younger two dogs. It was totally out of character for her, so I suspected there was something wrong. After an expensive bill from the vet (different vet I have for the puppy) they could not diagnose what was wrong, however, found spots on her spleen and liver. I had a bad experience with the clinic and will be switching vets. The good news is Dolly is on pain meds and feeling much better, so we will manage the pain for now. In a nut shell, November was stressful. I had a wonderful visit with my mom and things seem to be calming down! I have been a busy bee decorating the house for Christmas and can’t wait to share some Christmas inspiration with you!!!
During my mom’s visit despite the fact she wasn’t feeling great, she taught me how to make her yummy dark Christmas cake. I will post the recipe at some point and can’t wait for the cake to “age”! My mom will travel to my sisters this year for Christmas but having her cake will be a comfort over the Holidays for me!
My mom soaks the raisins in rum over night to let the flavour really soak in.
She coats the mix in flour so the fruit and nuts won’t sink to the bottom of the pan.
Mixing the batter.
My mom hard at work! 😉
Stay tuned for a Christmas tour!
